Fried Rice
A simple, classic fried rice recipe made with leftover rice, vegetables, and eggs.
## Ingredients
### Rice and Base
- 2 cups cooked rice (preferably day-old)
- 2 eggs
- 1 cup mixed vegetables (peas, carrots, or corn)
- 2 green onions, chopped
- 2 tablespoons oil
### Seasoning
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
- Salt, to taste

## Steps
1. **Prepare the rice**
Break apart any clumps of cold rice so it fries evenly.
2. **Scramble the eggs**
Heat oil in a pan, scramble the eggs, and set aside.
3. **Cook the vegetables**
Add more oil if needed, then stir-fry mixed vegetables until tender.
4. **Fry the rice**
Add the rice to the pan and stir-fry for several minutes until heated and lightly crisp.
5. **Season**
Add soy sauce, sesame oil, and salt. Mix thoroughly to coat the rice evenly.
6. **Combine**
Return the scrambled eggs to the pan, add green onions, and mix well.
7. **Serve**
Adjust seasoning to taste and serve warm.
